Kesar Phirni
Ingredients:
- 1 Liter milk
- 40-50 gm rice soaked for 3-4 hours then grind to coarse paste
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon fresh grated nutmeg
- few pinch kesar (saffron)
- Pistachio and almond blanched 3 tablespoon
Procedure:
- In a thick bottom pot boil milk for 10 to 15 mins.
- When boiling add rice paste (paste should be semi liquid, not to thick as it may tend to become lumps)
- and keep stirring continuously.
- It will start becoming thick.
- Add kesar and sugar.
- Then add Almond and pistachios.
- Traditionally served on small clay plate.
- serve cold.
