Avocado Dip
Indian Style Avocado Dip with Blue Cheese and North Indian Mango Pickle
Ingrdients:
- 1 medium size Avocado
- 1 tbsp yogurt
- salt to taste
- 1 tsp pickle (I used mango pickle)
- 2 tbsp blue cheese for topping
Procedure:
- De seed avocado and get the pulp mash it with yogurt and pickle together, add salt if needed, Sprinkle some blue cheese on top.

Paneer mutter masala
In this recipe you can replace paneer and mutter (peas) with any other vegetables.
Ingredients:
- 1 onion
- small bunch of coriander
- 1 med. tomato
- salt to taste
- 1'' ginger
- 2 garlic cloves
- chili powder as per taste
- 1 tsp garam masala
- 1/4 cup peas
- 100 gm paneer cubed
- 2 tbsp oil
- 1/2 tsp turmeric powder
- 1 tsp cumin
- 1 tsp kasoori methi (dried Fenugreek leaves - Optional)
Procedure:
Curry Paste:
Grind together onion, coriander with stems and leaves, ginger and garlic to a fine paste-
.
- Add oil in a pan then add cumin, and finely chopped tomatoes. Fry well.
- Now add turmeric and chili powder, little salt. Fry well.
- Add the curry paste and fry stiring continuously for about 10-15 min until you see oil beside curry paste .
- When done add 2-3 tbsp of water, boil it and add paneer and peas to cook.
- Cook for 5-7 mins. Just before turning off the gas sprinkle with roasted Fenugreek Leaves
- Serve with roti, chapati....
Tomato Pizza
Ingredients:
Pizza Base:
- 1 cup Plain flour
- 1/2 cup water
- 1/2 tsp salt
- 1/2 tsp sugar
- 1tbsp dried yeast
- 1 tbsp olive oil
For topping:
- 2 tomatoes
- few pieces of Sun dried tomatoes
- 10-15 fresh Basil leaves
- Peri peri sauce as per taster OR dry crushed red chili
- 200 gms mozzarella buffalo cheese sliced
- tomato sauce
Procedure:
Pizza base:
- To make the pizza dough, place the plain flour, yeast and salt in a large bowl and mix well.
- Make a well in the centre and add all the water and olive oil to the dry ingredients.
- The water needs to be lukewarm to activate the yeast and encourage it to grow.
- If the water is too hot, it can kill the yeast.
- Use a wooden spoon to stir until combined and then use your hands to bring the dough together in the bowl. It should be soft and slightly sticky.
- Keep aside for resting for around 30 -40 mins
- Now roll into sheets.
- Brush round pizza trays with the olive oil to lightly grease. Sprinkle with a little flour. The flour will help give the pizza a crisp, dry base.
- Preheat oven to 180°C for 20 mins. (timing might differs with individual oven)
- Place the base and cook for 10 min.
- Then remove and place on wire mesh so it doesn't becomes soggy at the base
Topping:
- Apply tomato sauce to the base.
- Arrange tomato slices followed by cheese and basil leaves and chopped Sun dried tomatoes.
- Can sprinkle little salt and Pepper.
- Now keep it in oven and bake for 20 min or till the cheese melts.
- Cut into pieces when done.

Paneer Chili Fry
Paneer chili Fry
Ingredients:
- 100 Gm Paneer
- 1/2 Cup green and red capsicum
- 1tsp ginger paste
- 1-2 green chili
- 1 onion finely chopped
- turmeric a pinch
- 1 tsp cumin
- salt to taste
- 2 tbsp oil
Procedure:
- Cut paneer into small pieces and capsicum too
- In oil fry onion, when translucent add cumin, ginger paste and slit green chily.
- fry well and add turmeric and salt.
- now add chopped capsicum, do not cook much, just fry for a minute.
- then add paneer , mix everything together for 2-3 minutes.
- if needed add salt.
- serve hot with chapati or roti.

Stir fry
Ingredients:
1 cup beans
1/2 zuchinni chopped
1 carrot diced
1 onion diced
1/2 bowl fresh coriander
1tbsp soy sauce
1tbsp ginger garlic paste
1 tbsp oil
salt to taste
Procedure:
1) heat wok add oil than ginger garlic paste, soy sauce. Fry for 1-2 min.
2) add onions, carrot, beans, zucchini, and fry for 2-3 min. Add salt.
3) Garnish with coriander.
Serve with Congee
Can top with roasted peanuts or cashew nuts or Sesame seeds

Kolhapuri Misal Pav
Kolhapuri Misal Pav
Kolhapur is a famous city of Western Maharashtra in India, know for it’s famous Mahalaxmi Temple and spicy food.
On a weekend, I thought of making something different for lunch. So the dish was Kolhapuri Misal Pav. This is famous recipe from Kolhapur, so it’s name has Kolhapuri . Misal means mixture, as it contains 3-4 different varieties of sprouts. Pav means bread.
I remember my mother use to make this at the time of Diwali as we have huge stock of the snacks.
So remembering those old days.Lets make misal.
With all this ingredients it seems difficult but not if you gather all ingredients as mentioned below.
For 5-6 persons

For curry:
2 cups sprouted beans cooked
2 onions chopped
2 small tomatoes chopped
½ tsp turmeric
6-7 curry leaves
1tsp Garam Masala
1 tsp red chili powder (can add extra as per taste)
5 cups water
¼ tsp sugar
Salt to taste
For curry paste:
2 tbsp dry coconut
½ cup fresh coriander leaves
3 garlic cloves
1 inch ginger ---- and grind all together to a very fine paste
For potato vegetable:
3 Potatoes (boiled) and chopped
1 onion chopped
¼ tsp turmeric
1tsp cumin seeds
1 tsp mustard
5-6 curry leaves
¼ cup Fresh coriander
Salt to taste
1 onion finely chopped
1 cup fresh coriander chopped
1 tomato chopped
1 Packet- 500gm spicy snacks (can get from Indian store)
1) Heat oil in thick bottom soup pan.
2) Add cumin, onions and fry till translucent.
3) Add turmeric and chili powder.
4) Add curry leaves and garam Masala and tomatoes.
5) After frying for 4-5 min add the curry paste.
6) Fry again for 6-7 mins till oil separates from the paste.
7) Then add cooked sprouts…. (wash and cook sprouts in pressure cooker 2 whistle or add to boiling water and boil until it becomes soft/ cooked).
88) Adding salt and sugar ,Let the mixture boil for few min.
9) When the curry is boiling remove the oil which floats on top in a bowl and keep aside, use the same oil while serving on top. ( the oil is called as 'cut').

2) In a pan add oil chopped onions, turmeric, cumin and mustard seeds, curry leaves, salt and fry for 1-2 min.
3) Then add potatoes and chopped fresh coriander. And fry for 2 -3 min.
4) Vegetable is ready.
5) I am not using chili in this because overall dish will become more spicy than planned.
Serving suggestions are as shown in the picture.

Stir fry Sprouts
Chinese Fried vegetable
Ingredients:
- 100 gms bean sprouts
- 1 carrot sliced
- 2 strings of spring onion chopped
- 1/2 '' ginger grated
- 1 tsp soy sauce
- 1/2 rice wine
- pinch of brown sugar
- salt to taste
- freshly ground pepper
- 1 tsp oil
Procedure:
- Heat oil in a pan add ginger,soy sauce and rice wine, sugar. let it simmer for 30 sec.
- Add sprouts and carrots, fry well and taste for salt , if needed then add more. Cook for another 30 sec.
- Before serving garnish with spring onions and carrots and ground pepper.
